Thrifty Waffle Mixes and More

I love using money saving mixes. Not only are they cheaper but they taste better than store bought mixes. These recipes are easy to make and so delicious. Try one today!

Pancake Mix – This is such an easy recipe. I keep this in a freezer bag in my fridge. Anytime the kids want pancakes I just grab this and whip up some yummy pancakes. This is such as easy, cheap mix that you will never buy pancake mix again. If you do not have buttermilk just add a Tablespoon of lemon juice to milk and let sit for 5 minutes. You will not taste the lemon and it creates instant buttermilk.

Ingredients:

  • 3 Cups flour
  • 4 Teaspoons baking powder
  • 2 Teaspoons salt
  • 2 Tablespoons sugar

Directions: Mix ingredients together and keep in an airtight container.When you are ready to make pancakes:

  • 1cup of pancake mix
  • 1 Cup buttermilk
  • 1 Egg
  • 3 Tablespoons of butter, melted

Directions: Mix until smooth. Do not over mix. Let mixture stand for 5 minutes.

Waffle Mix – There is nothing like fresh hot waffles off of your waffle iron. I try to make a big batch and freeze the extras. Eggo has nothing on this recipe.

Ingredients:

  • 4 Cups Flour
  • 2 Tablespoon baking powder
  • 4 Tablespoons sugar
  • 2 Teaspoon salt

Directions: Mix together and keep in an airtight container.When you are ready to make waffles:

  • 1 cup of mix
  • 1 cup of buttermilk
  • 3 Tablespoons butter, melted

Directions: Mix until smooth. Ladle into waffle iron and cook according to the waffle iron directions.

Home Made Bisquick Recipe – Use this recipe in place of anything calling for Bisquick. This is a great money saving mix. Make sure to use shortening as the mix does not taste the same with butter or margarine.

  • 8 Cups Flour
  • 1/3 Cup baking powder
  • 2 Teaspoons salt
  • 2 Tablespoons sugar
  • 1½ Teaspoons salt

Directions: Mix together dry ingredients. Cut in shortening until mixture is crumbly. Store mixture in an airtight container for up to 1.5 months in the fridge.
