Thrifty Thursday

sloppy joesFor this thrifty Thursday dinner I thought I would go with a classic, Sloppy Joes. This is something that my mom used to make us quite regularly and being a mother of two and soon to be three I understand why. It is cheap and easy to make! I have been on the vegetarian bandwagon for a while, which makes it harder to make/eat some of the things I used to eat as a child. However, using the veggie crumbles instead of ground beef for the sloppy Joes works very well, my kids did not even realize it was not real ground beef. Of course, this is a personal choice. Here is the recipe that I used. Of course, there are some nights when I just buy a can of manwich and at it to the beef/veggie crumbles and call it a night.



1 lb ground beef/veggie crumbles

1 green pepper diced

1 can tomato sauce

1 onion diced

1 tsp. garlic

1 tsp. vinegar

1 Tbsp. brown sugar

1 Tbsp. prepared mustard

Salt and pepper to taste

4 buns (I use whole wheat)

To Make:

Brown the hamburger, onions, and green peppers. Drain the grease from the hamburger. If using vegetable crumbles you will want to add about a tablespoon of olive oil to cook the crumbles in and there  is no need to drain. Once browned add in the rest of the ingredients and cook until heated through, typically five to ten minutes. Spoon the mixture onto the buns. I typically serve this with French fries or tator tots and some type of fruit.
