Leftover Lesson – Chili Dogs

Chili Dogs

Chili Dogs Recipes

Sometimes it’s difficult to toss out those leftovers, especially when you’re on a budget. Because of that, I try to use it all. One of my favorite leftover recipes is for chili dogs. They’re quick, easy, taste awesome and I don’t get any complaints from the kids!

Ingredients:

2 or more cups of leftover chili

8 hot dogs

8 buns

1 cup of shredded cheese

Diced onion (optional)

Jalapeno peppers (optional)

Mustard (optional)

Ketchup (optional)

Preparation:

Prepare hot dogs to your preference – I tend to boil them in a pot of water just because it’s easier than firing up the grill or attempting to microwave them all without having at least 4 of them split and curve.

Reheat the chili – again, you can do this to your preference. If it’s still in the pot, I put it on the stove. If it’s not, into the microwave it goes. The key is that it MUST be hot.

Put the hot dogs in the buns, add mustard and ketchup if you so choose, sprinkle a little bit of cheese on top of them and add chili. Sprinkle a little bit more cheese and then top with diced onions and jalapenos if you wish.

Serve and enjoy!
