Tasty Taco Salad

One little secret you all might not know about me is that I’m a HUGE fan of salads. I love to experiment, blending fruits, vegetables, meats, cheeses and more together to create something that’s absolutely delicious. I would rather have a taco salad than tacos any day of the week, which is why I’m sharing my Tasty Taco Salad recipe with you all today.

Tasty Taco Salad Recipe

I know that most of you are going to say, “Goat cheese in taco salad? Really?” And to that, I want to say, “YES! Trust me, it will hypnotize your taste buds!” You won’t be able to experience the sheer joy of this Tasty Taco Salad unless you try it for yourself, so stray outside your comfort zone and give this recipe a chance to wow you.


1 lb. ground beef, prepared according to taco seasoning package or seasoned with your own homemade taco seasoning

1/2 head of Iceberg lettuce, washed, drained and chopped

1/2 head of Bibb or Romaine lettuce (your preference), washed, drained and chopped

1 hand-full of Spring Mix, if you prefer (optional)

2 medium-sized tomatoes, diced

1 onion, finely chopped

1 cup shredded Monterey Jack cheese

1 cups crumbled goat cheese

1 container, Wholly Guacamole Original Guacamole or Spicy Guacamole, depending on your preference for heat (you can use 2 cups of another brand or homemade guacamole as well)

2 containers Wholly Salsa – Roasted Tomato Salsa or Hot Salsa (or 4 cups of any other type of salsa you prefer)

4 cups tortilla chips, crushed into small pieces

1 cup sour cream


Mix chopped lettuce (with optional Spring Mix) together in a large bowl.

You can make the salad as one large one or several small ones. My family typically makes individual salads, so we put those together as follows…

Add one cup of crushed tortilla chips to each plate. Top with 2 hand-fulls of the lettuce mixture. Sprinkle 1/4 cup of diced tomatoes and onions to taste over the lettuce mixture. Top this with a 1/8 cup of goat cheese and 1/8 shredded Monterey Jack Cheese. Add 1/2 cup of taco seasoned ground beef to the middle of the salad. Add 4 dollops of Wholly Guacamole around the perimeter of the meat. Add 4 dollops of  Wholly Salsa in between the dollops of guacamole. Top taco meat with a dollop of sour cream. Serve.

Makes 6 servings.
