What better way to enjoy the morning or have a quick and yummy snack? These Chocolate-Chocolate Muffins come from a recipe that I found and modified years ago. We all love them and I hope you do, too!

Chocolate-Chocolate Muffins Recipe

One of my biggest complaints about the old chocolate muffin recipe I had wasn’t that the muffins didn’t taste good, but that they seemed so dry. I’m happy to report that’s not the case with this delicious chocolate muffin recipe. You’ll find that making homemade muffins is a tasty way to go with these deliciously moist Chocolate-Chocolate Muffins!

Ingredients:

2 cups all-purpose flour

1/2 cup cocoa powder (unsweetened)

3/4 cup sugar (white, granulated)

1 teaspoon baking soda

1 cup chocolate chips or well broken chocolate chunks

2 eggs

1/3 cup vegetable oil

3/4 cup plain or vanilla yogurt or sour cream

1/2 cup milk

1 teaspoon vanilla extract

Nonstick baking spray

2 muffin pans – I prefer the 6 ct. style, as they yield larger muffins, but you can also use a 12 ct. pan and a mini muffin pan

2 mixing bowls

 

Preparation:

Preheat oven to 400 degrees Fahrenheit.

Spray or grease the muffin pan, ensuring to spray the upper outside of the muffin pan so that the muffin tops don’t stick. If using the paper muffin liners, you’ll still want to spray the top of the pan.

Combine all dry ingredients (flour, cocoa powder, sugar, chocolate chips, baking soda) in a mixing bowl and mix thoroughly.

In another bowl, combine all of the liquid ingredients (eggs, milk, yogurt, vanilla extract and vegetable oil) and blend until nice and smooth.

Slowly stir the liquid mixture into the dry mixture and stir until batter is well blended.

Pour batter into the muffin cups until each is 3/4 full.

Bake about 22 minutes, or until a toothpick inserted into the middle of the muffins comes out clean.

Allow to cool for 15 minutes before removing from pan.
