Peppermint Chocolate Chip Cookies

Peppermint Chocolate Chip Cookies

One of our favorite things to do as we near the holidays is bake cookies. It makes our home smell delicious and if we get any crazy weather, we always have plenty of great snacks to keep us occupied! Of course, our cookie baking also doubles as gift shopping, as we generally box up assortments of cookies to give as gifts. These Peppermint Chocolate Chip Cookies are one of my mother-in-law’s recipes that she let my son help with this year. I’m not a big fan of peppermint anything, but these cookies are a definite exception because they are so very delicious!

Peppermint Chocolate Chip Cookies

  • 2 ¼ cups all-purpose flour
  • 2 cups semi-sweet chocolate chips
  • 1 cup butter, softened (equivalent of 2 sticks of butter)
  • ¾ cup packed brown sugar
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 2 peppermint candy canes, crushed into small pieces (you can also use about 12 crushed peppermint candies)

Preheat oven to 375 degrees Fahrenheit.

In one large bowl, combine flour, salt and baking soda.

In another large bowl, beat together the butter, brown sugar, granulated sugar, and vanilla extract until you have a creamy mixture. Add one egg and beat well. Add the other egg, beating it into the mixture well. Gradually add in the flour mixture, beating in gradually. Stir in the chocolate chips and crushed peppermint candy.

Use a tablespoon or small ice cream scoop to gather dough and drop onto an ungreased baking sheet. Place into oven and allow to bake for 10-11 minutes or until golden brown. Allow to cool for 2-3 minutes, then transfer to wire racks to complete the cooling process.

Enjoy with a nice cold glass of milk!
