Five Cheese Red Gold Lasagna

One of my stepdaughter’s favorite dishes is lasagna, so we have to make sure it’s on the menu at least twice a month. This month, we tried something a bit different and incorporated five different types of cheeses, pepperoni and Red Gold tomatoes. It turned out to be AMAZING and I highly encourage you to try this Five Cheese Red Gold Lasagna recipe for yourself!

With Red Gold tomatoes, you can enjoy a delicious and completely filling family meal that even the kids will want more of. This Five Cheese Red Gold Lasagna recipe takes just about an hour. Here’s my easy recipe:

Ingredients:Five Cheese Red Gold Lasagna Layer

1 box Oven Ready Lasagna Noodles – any brand should be fine
1 can Red Gold Crushed Tomatoes
1 can Red Gold Diced Tomatoes with Onion
1 small can tomato sauce
3 cups Cottage Cheese – you can use Ricotta if you prefer (I like Ricotta, but my family isn’t a fan of it)
3 cups shredded Mozzarella Cheese
2 cups shredded Colby Jack Cheese
1 cup Parmesan Reggiano
6 slices Provolone Cheese
1 lb. ground beef, browned
1/2 lb. sausage, browned (you can use Italian sausage, but I prefer spicy breakfast sausage)
16 pepperoni slices
1/2 cup diced onion
1/4 cup diced green pepper
1/2 Tbs minced garlic
1 tsp sugar
1./2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp salt
6-8 toothpicks

Preparation: Five Cheese Red Gold Lasagna - In the Making

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a small pan, saute 1/2 cup diced onion, 1/4 cup diced green pepper and 1/2 Tbs minced garlic.
  3. In one large bowl, mix crushed tomatoes with tomato sauce. Stir in 1 cup Parmesan Reggiano, sauteed onions/pepper/garlic mixture, 1 tsp sugar, 1/2 tsp onion powder, 1/8 tsp salt and 1/2 tsp garlic powder. Stir well to blend.
  4. In another large bowl, mix ground beef and sausage together well.
  5. Pour one cup of the tomato sauce mixture into the bottom of your lasagna pan. Top with a single layer of oven-ready lasagna noodles.
  6. Top lasagna noodles with 1 and 1/2 cups of cottage cheese. Top cottage cheese with one cup shredded Mozzarella. Place 16 pepperoni slices evenly over the top of the Mozzarella.
  7. Add another single layer of lasagna noodles.
  8. Top lasagna noodles with 2 cups of beef mixture. Top beef mixture with 1 cup of Colby Jack cheese. Top cheese with 1 and 1/2 cups of tomato sauce.
  9. Add another single layer of lasagna noodles.
  10. Top with 1 and 1/2 cups cottage cheese, 1 cup of shredded mozzarella and 1 and 1/2 cups tomato sauce.
  11. Add another single layer of lasagna noodles.
  12. Top with remaining beef mixture. Open and drain Red Gold diced tomatoes with onion. Spread tomatoes over beef mixture and spoon about 1/3 cup of sauce over the tomatoes.
  13. Add another single layer of lasagna noodles.
  14. Top with remaining sauce, spread remaining Mozzarella cheese over the sauce, then evenly place 6 slices of provolone over the top of the Mozzarella cheese.
  15. Place toothpicks into the uncooked lasagna. You’ll need two at each end, spaced evenly apart, and two – four in the middle section. This will prevent the cheese from sticking to the aluminum foil.
  16. Cover with aluminum foil and place on middle rack of oven. Bake for 30 minutes.
  17. After 30 minutes, remove the aluminum foil and return to oven for 10 – 15 minutes or until the cheese begins to brown.
  18. Allow to sit 10 minutes before serving. This will provide you time to prepare garlic bread if you like.
