20130611_19354520130611_193540It is Thursday yet again and time for another great meal for fewer than five dollars. This happens to be a cheap, quick, and easy meal that I just made for my family last night. I don’t know about you, but when it is hot outside I do not like to eat much, so for dinner last night I kept it simple with a mixed green salad and some yummy fried zucchini cakes. Here is the recipe for the zucchini cakes and salad.

Zucchini Cakes

Ingredients:

  • 2 large zucchini
  • One egg
  • Onion if desired
  • Bread crumbs or flour
  • One clove garlic
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

Wash the zucchini and cut off one end. Use a grater to shred the zucchini into small strips. Place the shredded zucchini in a strainer and press out the excess water. Place in a bowl and add egg and onion. Mix well. Add in the salt, pepper and garlic. Gradually add flour or bread crumbs until the mixture becomes doughy.

Heat a skillet with about a tablespoon of olive oil. Take a spoon and scoop balls of the “dough” into the frying pan. Flatten with a spatula. Heat on one side until brown, about three minutes. Then flip over and brown the other side.

These are great plain, but my kids also like them with ranch.

Mixed Green Salad

This is a simple salad that can be made with anything that you like. I used mixed salad greens, spinach, feta cheese, and strawberries. I tossed it with a balsamic dressing and it was delicious!

This was the perfect summer meal! The cost was well under $5 per serving.

Tasty Tuesday

 

For this tasty Tuesday I am sharing a great recipe that can be used for breakfast, lunch, dinner or even an afternoon snack. This is a wonderful twist on French toast. It is simple and delicious!

 

Ingredients

  • Bread ( I use whole wheat)
  • Stuff for filling: this can be anything from jelly, cream cheese, nutella, any nutty spread, peanut butter, marshmallow fluff, any type of mix that sounds good to you.
  • Eggs
  • Milk
  • Butter
  • Cinnamon sugar
  • Maple syrup

To Make

Use a rolling pin to flatten out your bread. You can remove the crusts of the bread if you want, my kids hate crust for some reason, and so I typically just take it off. Next, take about a tablespoon of your filling and spread it on the bread, about an inch from the side in a strip. Our current favorite is strawberry jam with cream cheese, peanut butter and nutella is a close second.

 

Once you have the filling in place roll up the bread. Whisk the milk and eggs together just like you would for regular French toast. Heat up some butter in a skillet. Take the rolls and soak them in the egg/milk mixture and then place in the warm skillet. Turn until brown on all sides. Take the hot rolls from the pan and roll them in cinnamon and sugar. Serve with maple syrup for dip.

 

These are so easy to make and simply fabulous. The kids can even help!

Thrifty Thursday

It is that time again! Since the kids are out of school for the summer I thought I would go with a couple of cheap lunch ideas to help keep your grocery bill under budget through the summer.

 Mini Pizzas

Every kid loves pizza, so why not let them make their own? It is cheap and easy to do.

Ingredients

English Muffins or Biscuit dough

Tomato sauce

Cheese

Pepperoni or other toppings

Let the kids spread some tomato sauce on either an English muffin or a piece of rolled out biscuit dough. Place cheese and other toppings on top of the tomato sauce and simply bake in the oven. If using English muffins you will bake at about 350 until the cheese is melted. If using biscuit dough, follow the directions on the package to make sure that the dough gets cooked through.

Pinwheels

Pinwheels are easy to make as well as cheap! You can use anything that you want for the center. My kids love turkey with cream cheese.

Ingredients

Tortillas (I use whole wheat)

Turkey

Cream cheese

Spread cream cheese on the tortilla and then place a piece of turkey on top. Roll the tortilla up and then slice into 6 to 8 “pinwheels.” As mentioned, you can use any type of ingredients for these that you want. Just make sure that you do not fill them to full or they will be difficult to roll and cut.

Tasty Tuesday

I love salads, especially during the summer months. My family and I are trying to eat healthier so I have been trying many great new recipes. One of our current favorites that is super easy and extremely healthy is a black bean and avocado salad.

Ingredients

 

 

  •  1 can black beans
  • 1 large ripe avocado
  • 1 large tomato
  • 2 Tbs. of olive oil
  • Salt and pepper to taste

 

Peel the avocado and cut into small pieces. Put the pieces in a medium sized bowl. Next drain and rinse the can of black beans and add to the avocado. Cut the tomato and add to the mixture. Stir all the ingredients together and add the olive oil. Sprinkle with salt and pepper to taste.

I love this salad as is, but I am sure you could add some onions, olives, or other favorites to it and it would be delicious. 2013-06-039520.59.32

If you’re a fan of granola, you’re going to love Ola!

I recently had the opportunity to try an assortment of tasty goodness from a company that was completely new to me: Ola! Foods. The products I was asked to try was an assortment of Ola! granola products. I’m a huge fan of granola, though the granola I typically eat comes in the form of a bar or a little sprinkle’s worth in a plastic cup that accompanies my yogurt. In exchange for my honest review, I received the following products: A full size bag of Ola! Cranberry Orange Pecan , a full size bag of Ola! Vanilla Almond, a full size bag of Ola! No Nut Vanilla, and snack sized bags of No Nut Vanilla and Vanilla Almond.

Ola! Review – What is so great about Ola!?

Ola! Granola is 100% natural. You know what that means? It means that there are words that you recognize on the back of the package…yep, right there in the ingredients list. There are no confusing scientific terms here, which makes me feel a whole lot better about feeding it to my family. What might you expect to see? Well, some of the ingredient lists are still fairly long, but it’s because of the natural goodness. Here’s an example from the back of the Ola! Cranberry Orange Pecan package:

Ingredients: Whole Grain Oats, Pecans, Pure Maple Syrup, Dried Cranberries (sugar, expeller canola oil), Wheat Bran, Whole Wheat Flour, Orange Juice, Non-GMO Expeller Pressed Canola Oil, Pure Vanilla Extract, Cinnamon and Sea Salt.

Pretty cool, right? That’s one of my favorite things about Ola!, but it’s certainly not the only thing!  It’s also REALLY tasty! Pop a handful in your mouth and you’ll not only taste a burst of all natural flavor, but it’s also crunchy and supremely enjoyable.

Ola! Review – Even Picky Kids Like Ola!

Finally, my very favorite thing about Ola! is that my picky 4 yr. old is in love with it. Yes, moms, it’s good for you AND picky kids like it! Well, I shouldn’t say ALL picky kids, but my son is pretty picky and he devoured a snack pack in record time. The fact that my child liked it alone is enough to make me a huge fan of this line of products. Although my son liked all of the different flavors, I think his favorite was the Vanilla Almond because he really likes Almonds. I gave him the snack pack after I took my picture of the grouping and he practically inhaled it and asked for more.

Of course, when I told him that I wanted to try the Cranberry Orange Pecan, he grabbed it from me and said, “Me first, mom!” I’m usually not fond of that attitude, but I didn’t mind so much since I was happy that he wanted to eat something other than pizza or hot dogs. You can see him hugging the package of Ola! above. Cute, huh? Keep in mind that he had a death grip on it because he didn’t want to share it with me. I can only imagine what the pics would look like of me trying to get it away from him. Luckily, dad wasn’t home to facilitate images of that scene, but I will tell you that it involved me having to chase him down the hallway. Surprisingly, he doesn’t even act like that with candy, so I’m a happy mom.

Personally, I think Ola! is a little bit addictive. I seriously could not stop snacking on it. In fact, I’m pretty sure I had at least two servings before I went and put it up and out of my line of sight. Bottom line? This stuff is good!

Well, there’s another great kitchen appliance that I didn’t realize I couldn’t live without until I got one, and that’s the rotisserie. I recently had the opportunity to review the Ronco Showtime 5500 Stainless Steel Rotisserie and it now ranks right up there with the microwave on my list of most important small kitchen appliances. If you’re interested in cooking healthier meals that are just naturally more delicious, then a rotisserie is going to be a product that you’ll appreciate. The Ronco Showtime 5500 Stainless Rotisserie comes with everything you’ll need to get started – the rotisserie spit, nonstick drip tray, carving platform, multipurpose basket, oven gloves, food ties and an instructional DVD. Out of the box, I had this baby ready to go in less than 5 minutes. The part that took me the longest to figure out was where the heat plate was supposed to go. Yes, it comes with an instruction booklet and a DVD for a reason. So I finally broke down and opened that instruction manual and you know what? That’s not the only thing that they teach you in there! They also teach you how to tie a chicken and provide several recipes that I plan to try, but the first thing I wanted to do was make rotisserie chicken. That’s what I did.

The chicken? Well, there was an incident. In fact, I was on the phone with Tara from Semmes Savers while I was trying to learn how to tie my very first chicken and I’m pretty sure she got a few good laughs that night! Okay, so I am not exactly a pro at tying a chicken. Who knew? I am, however, very committed to learning to do it quicker and better now that I have this Ronco rotisserie!

I had actually planned to show you all how to tie a chicken. I had the camera out and ready to record my experience. It seemed like a good idea, but after the first three minutes of me staring at the chicken and the diagram in the Ronco manual, then playing with the food tie for another minute or two, I figured you’d all probably fall asleep waiting for me to figure it out. The good news? I did figure it out. I fought with that chicken for a good long time though. My son wasn’t real sure what I was doing or how he could possibly be involved, so I put the phone on speaker and let him talk to Tara while I wrestled the chicken. When I finally got that food tie around the legs and it didn’t slip off, I practically hopped up and down with joy!

And here’s what it looked like after about an hour on the rotisserie – mmm!

But why stop at chicken? I also cooked a pork loin on my Ronco rotisserie and it turned out fabulous! The thing I love most about this rotisserie is that it really locks in the flavor. I barely seasoned the items that I’ve cooked with it and they turn out to be the most flavorful things that I’ve ever made! And why not? They are literally being basted constantly in their own juices. The result? Absolute deliciousness – and the whole family loved it!

The multi-purpose basket that comes with the Ronco Showtime Rotisserie is awesome also. In about 30 seconds, you can transform that spit into a basket that can easily cook steak, kabobs, fish, chicken breasts and more to perfection. Want a quick and healthy meal? Toss a few chicken breasts in the basket. Let them cook for about 15 minutes, then toss in some fresh veggies like squash, zuchinni, halved or quartered potatoes or whatever you’re longing for that night. It’s a one basket wonder and makes dinner so simple!

The gloves are a must have, as they allow you to safely and easily work with your machine. When that little timer dings and your stomach has been twisting in anticipation, you certainly don’t want to wait for the machine to cool down to get your dinner plated! That’s why these gloves come in so handy! Yes, they are big and bulky looking, but they are really a lot easier to use than they look. And talk about a heat barrier! These gloves are nothing short of amazing.

I also have to compliment Ronco on creating a truly non-stick drip tray. Of the six times that I’ve used this machine so far, I haven’t once had an issue cleaning it or the drip tray – and some of the drippings look burnt onto it. I admit, I was a little skeptical about that at first, but when I set the tray in the sink and began running water over it, the drippings started to wash right off without me even touching them! I thought that was fabulous that I didn’t have to scrub and scrub, so I had to mention it.

The instrument panel for the Ronco Showtime 5500 Stainless Rotisserie is simple to use. It is based on a timer system, so you can set the timer (about 15 minutes per pound) and choose your setting. You can select no heat, roast or sear. I generally choose the roast option, but I also really like the no heat option because it allows you to continue rotating the meat (and the juices within) while you finish preparing any last minute sides.

Overall, I have to say that this has been one of my favorite reviews because I love praise and my family definitely praised what I made them with this rotisserie!

Every great Halloween party needs great treats! So why provide the typical snacks when there are so many awesome, Halloween themed recipes that you have to choose from? With a box of Rice Krispies or generic Krisp Rice cereal, a bag of marshmallows and a few other ingredients, you can have some fun with the kids and make some awesome treats that everyone will enjoy! Better yet? Thrifty moms will love these because they are really cheap to make. In fact, most of the ingredients are probably hiding somewhere around the house, especially if you have a candy stash like me!

What you’ll need:

  • Large, microwave-safe bowl
  • Shallow bowl
  • Wax paper
  • Large platter
  • 3 tablespoons melted butter or margarine

Fabulous Friday: Five Fast and Fabulous Dinner Ideas

Let’s face it, today’s world simply runs to fast. There are days when I don’t even know where the time goes and the next thing I know I am trying to throw a dinner together in the midst of homework and extracurricular activities. Fast dinners are a necessity on many weekday nights. Here are five quick and easy meals.

Shrimp Stew with Beans

Quick and nutritious, this great meal only takes 15 minutes to throw together.

What you need:

• 3 cloves of garlic
• 2 tbsp olive oil
• 1 cup of tomato sauce
• 2 cups of water
• Pinch red pepper
• Dash thyme
• 1 can butter beans (15 oz)
• 1 can cannellini beans (15 oz)
• 1 pound raw shrimp
• A tbsp. of lemon juice
• Salt and pepper to taste

Directions:

Heat the oil and garlic in a large sauce pan. When the garlic starts to sizzle, add the water, tomato sauce, pepper, thyme and drained beans. Simmer for about five minutes. Add the shrimp and cook for about three or four more minutes, until the shrimp is cooked through. Add the lemon juice and season to taste with salt and pepper. Serve with warm bread.

Easy Chicken Parmesan

This is one of the fastest and easiest chicken parmesan recipes you will find.

What you need:
• 2 cloves garlic
• 2 tbsp. olive oil
• Red pepper flakes
• 6 chicken breasts (boneless and skinless)
• 2 ½ cups marinara sauce
• 2 cups mozzarella
• ¼ cup basil
• 4 oz parmesan
• 1 bag garlic croutons

Directions:

In the bottom of a 13 x 9 baking dish spread the oil, garlic, and red pepper flakes. Put the chicken breasts on top of this mixture. Cover evenly with the tomato sauce and basil. Place half of the mozzarella cheese and half the parmesan over the tomato sauce. Top with the bag of croutons and then put the remaining cheese on top. Bake at 350 degrees for about 40 minutes, until the top is browned and the chicken is cooked through.

Shrimp Kabobs and Mixed Salad

With five ingredients and about 20 minutes, this is a great meal for any night of the week.

What you need:
• 1 pound uncooked shrimp
• 2 peppers cut into chunks
• Package button mushooms
• ½ cup Italian dressing
• 10 oz package mixed salad

Directions:

Use metal or wooden kabobs and thread the chunks of peppers, shrimp, and whole mushrooms. There should be a bit of space between each piece. Brush the kabobs with about a fourth of a cup of the Italian salad dressing, saving the rest for the salad. Place the kabobs on the grill for about four to six minutes, turning once. You can also broil the kabobs if the weather is not ideal for grilling. Toss the mixed salad with the dressing. I like to plate the salad with the kabobs de-threaded on top.

Creamy Chicken with Asparagus

This quick meal is a favorite as my household loves asparagus.

What you need:
• Fresh or frozen asparagus
• Jar of alfredo sauce
• Fettuccine
• Shredded swiss cheese (can substitute any cheese)
• Frozen cooked and diced chicken

Directions:

Cook the chicken in a bit of oil until almost cooked through. Steam the asparagus and add to chicken. Add the Alfredo sauce and cheese. Simmer until the chicken is fully cooked. Serve over fettuccine.

Swedish Meatballs

This is a quick and easy dinner that everyone will love.

What you need:
• Frozen cooked meatballs
• Large bag of frozen mixed vegetables
• One jar brown gravy
• Sour cream
• Nutmeg

Directions:

Heat the meatballs and vegetables with the gravy in a large saucepan until heated through. Add the sour cream and a little bit of nutmeg. This is perfect served over mashed potatoes.

Vegetarian Dinners that Kids Will Love

Choosing to cut meat out of your diet is a big decision and can be a bit difficult, especially if you have children. Trying to find vegetarian dinners that the whole family will eat can be hard. I grew up in a family where dinner consisted of meat and a couple of vegetables. However, having recently decided to cut meat totally out of my diet I have found several meals that even my kids will eat. Here are a few vegetarian dinners that your kids are sure to enjoy.

Veggie Burritos

Veggie burritos are cheap and easy to make and are something the whole family can enjoy. This meal is on our menu at least twice a month. Here is the simple recipe that I use, but it can be altered in any way to make it your own.

Ingredients:

• 1 can black beans
• 1 can sweet corn
• 1 package taco seasoning
• 1 jar of salsa
• 1 package of 10 soft taco shells
• 2 cups cheese

Directions:

Heat the beans and corn together in a saucepan until warm. Add the taco seasoning and mix well, use as much or as little seasoning as you want. Once heated through spoon the mixture into a taco shell and cover with cheese. Roll into a burrito and place in a 13 x 9 baking dish. Repeat with all of the shells. Spoon the salsa over the top of the burritos and bake at 350 degrees until heated through, about 30 minutes. Serve with your favorite toppings such as guacamole or sour cream. We typically have a small salad along with this meal.

Black Bean Pizza Burger

What kid doesn’t like pizza? Combine those flavors with a great tasting black bean burger and you have the perfect vegetarian dinner for your family. This recipe can be altered to suit your tastes.

Ingredients:

• 1 can black beans (rinsed and drained)
• ½ onion chopped
• ½ green pepper chopped
• 2 cloves crushed or minced garlic
• 1 egg
• 2 tsp Italian seasoning
• ½ cup bread crumbs, oatmeal will work as well
• Worcestershire sauce
• Hamburger buns
• Provolone cheese (mozzarella or another cheese will work as well)
• Pasta sauce

Directions:

Put the black beans in a bowl and mash them using a potato masher or fork. In a food processor place the onion, pepper, and garlic and pulse. Make sure that you do not over do it as you will end up with a soupy mess. Mix the onion mixture in with the black beans.

In a separate bowl mix the eggs with the bread crumbs and Worcestershire sauce. You can add any seasonings that you wish. Add this to the black bean mixture and mix well. Divide the mix into four separate patties.

These patties can be baked in the oven or grilled. I have found the best way to prepare them is in a frying pan with a little bit of olive oil. Fry them for just a couple of minutes on each side. Once cooked through place on the bun and top with the heated pasta sauce and cheese.

I love to serve this burger with sweet potato fries.
